Easy Chia Pudding Recipe

~Prepare each day with love and kindness.~
This dish takes about 5 minutes to prepare. Mindfully set some time aside before bed to throw it together and you’ve got a nutritious and delicious breakfast waiting for you in the morning. Makes about two servings.
Chia pudding:
~2 mashed bananas
~1 cup almond milk
~4 tbsp chia seeds
~1/2 tsp vanilla
~sprinkle of cinnamon/ginger/nutmeg
Combine and let it sit overnight
Top with your favourite superfoods
My fav toppings:
~hemp hearts
~cacao nibs
~pecans
~dried cherries
(Sometimes I make this to go camping but I substitute the bananas for applesauce so it lasts longer).

Carrot Ginger Coconut Soup

This is one of my go-to’s. I love this soup. I make it for myself, I make it for guests, I make it year round! Takes about half an hour to make and serves around 4. Great with cheese or garlic toast!
3-4 large carrots, chopped
1 onion, chopped
1 tbsp fresh ginger, minced
1 1/2 tsp curry powder
1 3/4 cup vegetable broth
1 14 ounce can coconut milk
sea salt, to taste
Simmer the carrots, onions, ginger and curry powder in vegetable broth for 20-25 minutes, until carrots are soft.
Allow to cool slightly, and then puree in blender.
Return to heat and stir in coconut milk until well combined.
Season generously with sea salt, to taste.
You can add Parsley or Cilantro to top or optional cream or oil to drizzle as well.
Enjoy with loved ones!!
