Doesn't that look good?! I mean, I know a lot of people aren't huge fans of zucchini... but! if you just don't tell them, they don't even know it's there! Zucchini adds moisture and nutrients to this beautiful loaf. And there's lots of antioxidants in chocolate right ;) INGREDIENTS
2 eggs 1/2 cup vegetable oil- I used Avocado oil 1 cup sugar 1/2 tablespoon vanilla extract 1 cup zucchini, shredded (about 1 small) 1 1⁄4 cups flour 1⁄4 cup cacao powder 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 1⁄8 teaspoon baking powder Optional: Few tablespoons of hemp hearts/cacao nibs/maca powder (I put all three!!) DIRECTIONS In a mixing bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine dry ingredients; add to zucchini mixture and mix well. Pour into greased loaf pan Bake at 350°F for 1 hour or until a toothpick comes out clean. Eat warm with some organic butter!! YUM!! |
