My Ayurvedic doctor gave me this recipe to help me with my imbalances and to aid in the shift of the seasons!
Try this diet for a few days or a week at a time around the change of the seasons. It’s a good gentle cleanse and reset. Also if you’re experiencing any inflammation, yeast infections, mucus build up, or other imbalances… do a satvic diet! (Message me for more details as I have an Intro To Ayurveda explaining more!)
• For Pitta types or abundance: leave out the mustard seeds
1/2 cup basmati rice
1/2 cup mung beans (lentils or dal)
6 cups (approx.) water
1/2 to 1 inch ginger root, chopped
A bit of mineral salt (1/4 tsp. or so)
2 tbsp. ghee
1 tsp. coriander powder
1/2 tsp. coriander seeds
1/2 tsp. whole cumin seeds
1/2 tsp. whole fennel seeds
1/4 tsp. black mustard seeds
1/2 tsp. turmeric powder (fresh turmeric if you can find it)
1 pinch asafoetida (hing) *I almost never use this- it’s smelly and hard to find*
Handful of fresh cilantro leaves
2 cups assorted vegetables (choose from: sweet potato, asparagus, carrots, squash,
brussel sprouts, zucchini, green beans)
Soak your mung beans overnight.
Cook mung beans in water for about 15 minutes and drain. Soak your rice.
In a big pot, Heat Ghee on medium heat
Add seed spices to pan, roasting but not burning.
Add coriander powder and turmeric powder.
Add fresh ginger.
Add Beans and rise and stir to coat.
Add water and bring to a boil.
Add salt and vegetables.
Lower to a simmer and let cook approx. 40 minutes
Enjoy with fresh cilantro on top!
